That and the jungle level are like the only half-decent Sonic Adventure 2 stages.

When I was younger, the levels of each Crash Bandicoot game literally blew my mind. I actually loved it that some level designs were recycled because they seemed very 'alternate'.

I'd hate to use this to plug my own games but I really love the Pac-Man level in the first Conrad the Slaterhog- it was very disorienting and yet awesome at the same time.

Hmm...

I'll have to go with Click Clock Wood in Banjo Kazooie. The basic design is a level built around a huge tree, and there's the four variations being four different seasons.

And Mumbo turns you into a bee in that level, which is one of the best animal transformations in the game. I like the crocodile most though.

My favorite levels ever in any game is a tie between that one beach battle level in Mario Kart for SNES and that Pokemon level from SSB N64...they just dont make levels as awesome as they used to.
